LWML Zucchini Bread

LWML Zucchini Bread

We call this "LWML Zucchini Bread" because the recipe is adapted from that published by my mother's chapter of the Lutheran Women's Missionary League.

Ingredients
  • 3 eggs
  • 1 cup sunflower oil
  • 2 cups sugar
  • 2 cups grated zucchini
  • 2 3/4 cups flour
  • 1/8 cup wheat flour
  • 1/8 cup cornmeal
  • 1/2 cup (can) condensed milk
  • 3 teasoons vanilla
  • 1/2 cup chopped nuts
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon cinnamon

  1. Pre-heat oven to 325o.

  2. Mix all ingredients thoroughly.

  3. Pour batter into two bread tins.

  4. Bake for 60 minutes, or a little more.

Experimental: At some point we're going to try substituting cardamom for cinnamon.

We eat this hot from the oven with butter. Later, with cream cheese.
