Turkey & Jerusalem Artichoke Salad

Ingredients
  • 1 pound cubed turkey or chicken
  • 1 pound thin-sliced Jerusalem artichokes
  • 1 bell pepper (red if you care about color)
  • 1 minced jalapeno
  • 1/2 cup chopped cilentro
  • 1/2 cup chopped green onion
  • Salt, lemon pepper, cumin
  • 1/2 cup chopped green onion
  • 1/3 cup sour cream
  • 2 tablespoons mustard
Jerusalem artichokes are easy to grow and substitute well for water chestnuts in salads. This recipe combining chokes with turkey (or chicken, of course) is an amalgam of many, refined by trial. You could add other veggies.
  1. Mix the chopped ingredients in a big bowl.

  2. Add seasonings.

  3. Add the dressing: mayo, sour cream, and mustard.
